mmm, my favorite paneer dish

August 25th, 2008

hi Friends, foodie uncle here. I want to share my favorite recipe with you, how to make delicious paneer (or tofu for the really health conscious).

Ingredients - 2 onions, 2 tomatoes, couple of green chillies, 2 capsicum, 250gms of paneer or tofu (extra firm), 2 cloves of garlic, olive oil and spices

put a glass of water on boil and once it starts boiling, turn off the heat and put the tomatoes in the water. we will use it soften the tomatoes so we can crush them easily. don’t let them soak in the hot water for more than 7-8 minutes.

peel the onions and chop them finely.

chop the green chillies also as fine as you can, and the same same with garlic.

now, take a pan, put 2 spoons of olive oil in it, warm it a bit, add some jeera, and once jeera is slightly fried, add the chopped onions to hit. set the heat to medium and keep stirring the onions until they turn light golden. then add the green chillies and garlic to it and stir a bit more.

now take the paneer, which you should have already sliced (i like to slice it evenly 1cm x 1cm x 1cm) and put the paneer pieces in the pan. add some salt and turmeric, as per your taste.

Crush the tomatoes with hand and add them to the pan as well.

now slice the capsiscum in the middle, along the length, chop off the edges and take out the seeds. now slice the 2 halves into thin, long pieces.

add the capsicum to the pan and stir for a bit. add some garam masala, red chilli powder and dhania powder as per taste.

AFter stirring for a short while, add a little bit of water to the pan and cover it. Keep checking the pan every 5-6 minutes to stir and make sure nothing sticks to the pan.

cook until capsicum is cooked to taste. adjust spices as per your taste.

let me know how it works out for you.
